I attacked the inn NPC and now whenever I enter he runs away, how do I get him back?

Is the first inn keeper that lets you change your class.

You have to allow some time to pass in the game world, possibly a few days, and he should return to normal. The quickest way would be to make a run back to another NPC who will allow you to sleep, and then do so for several days in succession.
