Like they were standing in classic old traverse town that we recognize, then the scene closes and Sora is stand in some random part of the city. Is that how it happens in the game, or did they just skip to area that was good for a demo?

No, it does not happen like it does in the demo.

The demo only featured three things. What the cutscenes would be like (the scene betweeen Sora and Neku), a feel for what combat will be like (an OP command deck with a LOT of abilites unlocked that we probably won't actually have at that point), and what boss fights will be like (Hockomonkey). There is indeed a lot more in the game as I believe that both Sora and Riku will encounter every member of TWEWY crew.

From what I hear, there are two visits to Traverse Town for both, so it doesn't all have to be in the beginning.

That part of Traverse Town IS in the demo. In tutorial.

Is the whole freemotion(or whatever) thing going to be that good when we start the game?

Basically, the actual game goes like this:
    Ursula battle(in Tutorial)
    Drop into Traverse Town
    Meet Neku(in demo gameplay)
    Flowmotion tutorial(In Tutorial)
    some other stuff
    Flowmotion in battle(in Tutorial)
    Dream Eater tutorial
    Other stuff
District 4 and 5(in demo gameplay)

Something like that. I'm just guessing on some parts in the middle, as I haven't actually seen a video of the Japanese version. But it should be like that. It won't be like the demo where you see the scene and suddenly appear in the new District with no story build up. o_o
