I was playing as england and the pope called a crusade, I was having a war with denmark so i was afraid to commit to heavily to the crusade. So I sent on of my crappy throwaway generals and ended up taking jerusalum and about a crusade later Acre. He went from 3 command 2 chivalry to a 9 star general with max chivalry and 9/10 piety.

Yes, that's one of the main benefits of a Crusade. It provides amazing traits and ancillaries. Also, having your Faction Leader or Faction Heir arrive at the crusade target gives big benefits to your relationship with the pope. So it makes sense to send at least one of them as well as any other generals or family members you want to improve.

Yeah I figured fighting a holy war and liberating the holy lands would be at least somewhat life changing

The main problem with it is that it gives you tons of chivalry, and if you're playing on VH battle difficulty, you really need more dread for your generals. It's still useful for any family members who you wish to make into governors though, because chivalry is always more important for that.
