Once you beat the game once, infinite ammo is officially unlocked. And the only reason you would need to replay levels is for money to upgrade guns and exchange points to buy the infinite ammo in the bonus features menu.

Okay I beat the game, I used the points in Special Features to get infinite ammo for my magnum, I turned infinite ammo on and I still don't have it.
